MAHI MAHI RECIPE
let me tell you
about this secret ingredient and what
actually makes it peruvian style aji
amarillo now agiamario is very easily
available in peru at any corner but
abroad or like here in canada it's not
as easy to get your hands on at least
not fresh so abroad it's usually found
pureed and sold in jars i'm going to
link to places where you can find it in
canada or in the us but if you cannot
find it anywhere where you live then use
any other chili paste you can get your
hands on such as sambal or lake now
let's get into the recipe you will want
to take your fish out of the fridge at
least 20 minutes before it hits the pan
so it's not as cold get a large chopping board and cut a red
onion into large stripes then get two large tomatoes
cut them in half and deseed them
and then discard the seeds and cut the
tomato into large stripes as well
then get two cloves of garlic and crush
them with a garlic press
now preheat a large pan over medium heat
and in the meantime season the fish with
sea salt and pepper and cover it with
all-purpose flour
add a generous amount of avocado oil to
your pan and fry the fish in it until cooked to your liking
i cook mine about three to four minutes per side
then remove it from the pan and keep it warm
add the onions to the pan and fry for a
few minutes until they start to soften
at this point add two tablespoons of aji
as well as the crushed garlic and fry
for another minute or so
now add the tomatoes as well as a
quarter cup of fish broth let it simmer
for a minute or two
then add a splash of white wine vinegar
give it a good stir and then serve the
sauce over the delicious mahi mahi
